Cream Cheese Sheet Cake

This is a delicious sheet cake that keeps them coming back for more. We often serve it with strawberries and ice cream. It tastes so good by itself, we rarely make the frosting that goes with it. It's plenty sweet on its own.

Cream Cheese Sheet Cake

1 cup + 2 Tbsp butter;softened
6 oz cream cheese; softened
2 1/4 cup sugar
6 eggs
3/4 tsp vanilla
1/2 tsp salt
2 cup gluten-free flour
2 tsp xanthan gum
2 tsp egg replacer
1 tsp unflavored gelatin

Frosting:
1 cup sugar
1/3 cup evaporated milk
1/2 cup butter
1/2 cup semisweet chocolate chips

1. In a mixing bowl, cream butter, cream cheese, and sugar.
2. Add eggs, one at a time, beating well after each addition.
3. Beat in vanilla
4. Combine dry ingredients and mix into wet ingredients.
5. Spread onto a baking sheet (18" x 30").
6. Bake at 325°F for 30-35 minutes or until a toothpick inserted near the center comes out clean.

Frosting Instructions:
1. Combine sugar and milk in a saucepan; bring to a boil over medium heat.
2. Cover and cook for 3 minutes (do not stir).
3. Stir in butter and chocolate chips until melted. Cool slightly.
4. Stir; spread over cake.

Nana's Banana Bread

With whipping cream and brown sugar, this banana bread has a deliciously unique flavor you won't want to miss. It's one of our family favorites. People eat it right up and ask for more. Gluten-free goods with lots of fruit or fat usually have a really nice texture. The flavor gets even better if it sits for several hours. Often our loaf doesn't last that long.

Nana's Banana Bread

5 Tbsp butter
1/2 cup sugar
1/2 cup light brown sugar
1 large egg
2 egg whites
1 tsp vanilla extract
1 1/2 cups mashed bananas
1 3/4 cups gluten-free flour
1 tsp baking soda
1 tsp xanthan gum
1/2 tsp salt
1/4 tsp baking powder
1/2 cup heavy cream
1/3 cup chopped walnuts (optional)

1. Beat butter in large bowl with an electric mixer set at medium speed until light and fluffy.
2. Add granulated sugar and brown sugar; beat well.
3. Add egg, egg whites and vanilla; beat until well blended.
4. Add mashed banana, and mix on high speed 30 seconds.
5. Combine flour, baking soda, xanthan gum, salt and baking powder in medium bowl. 6. Add flour mixture to butter mixture alternating with cream, ending with flour mixture.
7. Fold walnuts into batter.
8. Pour batter evenly into greased 9x5x3 loaf pan.
9. Bake at 350 until browned and toothpick inserted near center comes out clean, approximately 55 minutes.
9. Cool bread in pan on wire rack 10 minutes.
10. Remove bread from pan; cool completely on wire rack.

Chicken Cacciatore

This recipe is so simple and yet tastes great. The sauce is yummy served over a side dish of rice.

Chicken Cacciatore

4 chicken breasts
1 can (15 oz) tomato sauce
1 can (4 oz) diced green chilis
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1 pinch cayenne pepper (optional)

1. Combine ingredients in a pot and bring to a boil. (You may add the chicken immediately or wait for it to boil.)
2. Once the sauce is boiling, reduce to a simmer.
3. Simmer chicken until it is cooked throughout (I usually plan on 25-30 minutes). Frozen chicken can be placed in here as well, it just takes longer to cook.

Chocolate Sour Cream Cake

One of the things that I missed the most when I went gluten-free was the texture of cake. Gluten-free cake tends to be heavier and drier. This recipe is so good it reminds me of gluten-filled chocolate cake.

Chocolate Sour Cream Cake

4 oz unsweetened chocolate; melted and cooled
2 eggs
3/4 cup sour cream
1 cup water
1/4 cup butter, softened
1 tsp vanilla
2 cups gluten-free flour
2 cups sugar
1 tsp xanthan gum
1 1/4 tsp baking soda
1 tsp salt
1/2 tsp baking powder

1. Preheat oven to 350 degrees. Melt chocolate over low heat and allow to cool.
2. Mix chocolate, eggs, and sour cream.
3. Add water, butter, and vanilla.
4. In separate bowl, combine dry ingredients.
5. Slowly add dry ingredients to wet ones.
6. Pour into two 9" cake pans or 13 x 9 pan. I don't remember how long to bake the cake for. I just bake it until a toothpick comes out clean in the middle. I'm guessing somewhere around 30-40 minutes.
